I survived a vegan

My brother in law finally came to visit and I survived three days of vegan cooking.  I did the coking...and the eating. I actually made some real yummy meals. We had vegan pizza, which Keith and I both loved and will be making again...very soon! Dinner number two was Portobello burgers with sweet potato fries and vegan baked beans. The beans were good but I don't think I could do the fake bacon all by itself. The last night was Taco salad with ground chick peas instead of ground beef.  I must admit that I put cheese on mine so I only did vegan eating two nights but Erik got three full dinners that were completely vegan!  I have no desire to be a vegan but it was fun to cook a bit out of the box and be a little creative. I know they weren't really the most creative meals ever but with two small kids (and Keira is currently on a food strike) I had to go with things that are at least familiar. 


Along with some healthy eating we had lots of fun while Uncle Erik was around.

We did a Magic Show at the school one night:  Phoebe was picked to be the Magicians assistant. It was very exciting for all of us.

And we did some jammin'.  Uncle Erik gave them the drum and the keyboard.  I may have to get them some piano lessons now.
